Our banana and beef coconut stew is a traditional dish from the Kilimanjaro region and is known as machalari. This dish is jam-packed with protein to ensure that you have all the energy you need to climb the mountain.
This wholesome, traditional dish is a guest favourite, and now you can make it at home!
This recipe makes enough to serve 4 people.
Ingredients:
- 5kg (1 pound) beef fillet, chopped into 1-inch cubes
- 1 bunch of plantains (12-14 pcs green banana)
- 2 tablespoons vegetable oil
- 1 red onion, chopped
- 4 garlic cloves, peeled and diced
- 2 tomatoes, chopped into 1-inch cubes
- 1 carrot, sliced
- 2 tablespoons coconut powder
- 1 bunch Cilantro, roughly chopped
- Salt and pepper
- 1 litre water
Instructions:
- Heat the cooking oil in a large saucepan.
- Add the onions and garlic, and fry until lightly golden.
- Add the beef and cook over medium heat until it is golden brown.
- Add the carrots and tomato.
- Continue to stir while slowly adding about 1litre of water.
- Season with salt and pepper.
- Cover the pot until the stew is simmering.
- Add the peeled plantains and still well.
- Cover the pot and leave to boil for about 10 minutes.
- In a separate bowl, mix the coconut powder and 1 cup of warm water and add the mixture to the stew.
- Reduce to a low heat for 5 minutes or until the plantains are tender.
- Garnish with freshly chopped cilantro and serve.
